In this case, I am not showing one recipe but three in one! Ready!!!! Lets go!!
I believe a lot that baked food is healthy, because the food cooks in dry heat. In this case, I wanted to bring this recipe which I hope you can do, and I hope you like it as I did
Of course, the calories will depend in the ingredients you use. In this case, we are talking about 268 kcal with only 21 grams of fats (as a way of comparison, if you eat a bag of Ruffles flavor jam of 115 g by yourself you will be eating 512 kcal and 30 grams of fats) that will give you guilty free calories with a lot of energy and a delicious meal to share with others.
Saying this, it is time to talk about the ingredients:
Ingredients for the first part of the recipe: the green sauce
5 tbsp of olive oil
1 onion cut in quarters
3 jalapeños (only if you like it spicy, if not, use peppers)
2 garlic cloves or if you have powder or chopped garlic it helps too
1 small bunch of parsley and basil
2 tbsp white wine vinegar
Salt at taste
Green tomatoes
Ingredients for the second part of the recipe
cooking spray or olive oil
2 sliced radishes
1 tsp salt and pepper (at taste)
200g baby spinach, washed
4 eggs
Cotija cheese at taste
½ tsp chili flakes (optional, in my case, I love spicy food)
1 tsp Dijon mustard (optional)
tortillas, to serve
And for the tortillas you will need
Half pound of corn flour (in my case, I am from Honduras and my favorite flour is Maseca, but if you do not have it, use PAN, it works just the texture is a little bit different)
Room temperature water – NEVER COLD (as needed)
Tools You Will Need:
Large pot
a pan
a Sharp knife
a Food processor or blender
an Oven
Plastic bags (circles or squares)
a Tortilla maker or a cutting board
Now that we have everything together, it is time to prepare the meal.
First, let's make the green sauce
If you don’t have time, you can buy it in the store, but if you have time, you can do it with these steps. in this case we are going to make the sauce by ourselves, the next time, buy it and compare and see if the flavor is different or similar. This sauce will help you to use it with chips as a starter and your gests will be very pleased in another day, today you are going to use it all in your recipe, but you can taste it while you are cooking, this is the good part to be the cook
- Put the tomatoes, jalapeños, half of the onion and garlic in a big pot with oil set over superheat until it gets dark as in the picture. Give them space to heat and get the best flavor
- Cook until everything is nicely burnt.
- Simmer for 15 minutes.
- Put the mixture with the rest of the ingredients of the sauce in to a food processor or a blender and blend!
- Finally, just for a bit, pass the mixture into a pot and cook for a few minutes just to make the flavors mix together
Second, let's make the meal
- Preheat the oven to 400°F.
- Grease a 10-inch ovenproof pan with cooking spray or olive oil.
- Pour the salsa into the pan.
- Crack the eggs on top of the salsa and season with salt and pepper.
- Bake until the eggs are no longer transparent. This is a little dance, because you want the yolk to still be runny, about 12-13 minutes.
- Serve! Sprinkle the cotija cheese all over the eggs and top with the cilantro and radishes if using.
- Serve with warm tortillas and lime wedges on the side.
Third, the tortillas
Well, this is a different recipe, I will tell you the only thing you cannot do, do not use tortillas from the store, they are not good. If you can find Maseca (a corn flour) or PAN you can use both, follow the steps in the bag which are the followings. Did I mention that making corn tortillas at home is easy? Yeah, it’s probably the easiest dough you’ll ever mix up! Here’s how it’s done:
- Mix the dough! Use your hands to mix the masa harina and water.
- Let it sit. The corn tortilla dough is ready when it’s about the consistency of playdough.
- Make small balls just to ensure you use all the dough with the same amount in each tortilla
- Pre-heat the pan in the stove a middle high temperature
- While you let the dough rest for a while, cut many circles or just squares with plastic bags (this is very important, do not miss it because it makes the dough not to get sticky into the table and the tortilla maker / cutting board)
- Then using a tortilla maker (if you don’t have don’t worry, you can use the cutting board you use to cut your vegetables) put on the kitchen table one piece of plastic, place the ball of dough and then the other plastic. Press until you have a tortilla
- Take it carefully and place it into the pan.
- Wait a few seconds and turn it
- Now take a piece of paper and press it gentle to make the tortilla to make a bubble and it is when it is ready to take out and start with the new one
I like to place the tortillas in a piece of cotton cloth, so the tortilla keeps its softness and temperature. These tortillas, the next day do not throw them, if they are dry, pass them into hot oil (or into the oven) and let them into a beautiful golden-brown color and you have your natural chips I talked about at the beginning to deep the green sauce or any other sauce, beans or let your creativity flows with it.
