Wendy's Cobb salad is one of the freshest salads I have ever had at restaurant. Since I am vegetarian, I ask the employees to make it without the chicken, which they do so without complaint. Because the salad is so large, I end up portioning the salad as a part of meal prepping. Each portion comes out to about 500 calories. To increase the protein, I add tofu or chickpeas. The tomatoes cut the richness of the buttermilk dressing, making it perfect for the humid weather we have been experiencing.
