Vegetable Fried Rice

Ingredients:

  • 2 cups cooked rice
  • 2 tbsp vegetable oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 2 eggs, beaten
  • 3 tbsp soy sauce
  • Green onions, chopped, for garnish

Instructions:

  1. Heat oil in a large skillet over medium-high heat. Add onion and garlic, and cook until softened, about 3 minutes.
  2. Add mixed vegetables and cook until tender, about 5 minutes.
  3. Push vegetables to one side of the skillet. Add beaten eggs to the other side and scramble.
  4. Stir in cooked rice and soy sauce. Cook for 2-3 minutes, until heated through.
  5. Garnish with chopped green onions before serving.
