Ingredients:
- 2 cups cooked rice
- 2 tbsp vegetable oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 cup mixed vegetables (carrots, peas, corn)
- 2 eggs, beaten
- 3 tbsp soy sauce
- Green onions, chopped, for garnish
Instructions:
- Heat oil in a large skillet over medium-high heat. Add onion and garlic, and cook until softened, about 3 minutes.
- Add mixed vegetables and cook until tender, about 5 minutes.
- Push vegetables to one side of the skillet. Add beaten eggs to the other side and scramble.
- Stir in cooked rice and soy sauce. Cook for 2-3 minutes, until heated through.
- Garnish with chopped green onions before serving.
