This is my go to ALL summer long. It gets very hot here in the southwest. We are in Arizona, the dry desert, and it get to 110- 115° for weeks on end. Staying hydrated is a daily chore.
I'm always looking for fun recipes to help cool down the body temperatures in our household and friends.
When we have a guests over, this is one of my favorites to serve up. It's easy, tasty, light and so refreshing. Your guests will be raving about it. The pineapple is so tropical, it's a great quencher to the taste buds. The cool whip gives it it's smoothness and creamiest texture. Some vegans are ok with honey, if harvest the right way. Some use a substitute, I use Agave golden syrup as a sub. Gives it a good sweetness. Easy to make this, right in front of your guests.
I like to add a few sprinkles of vegan chocolate on top. You can buy a bar of vegan chocolate candy, use a grater and put on top.
