Fava bean dip

Here’s a simple and delicious recipe for fava bean dip using dry peeled fava beans:

 

Ingredients:

* 1 cup dried peeled fava beans

* 3 cups water

* 3 cloves garlic, minced

* 1/4 cup extra virgin olive oil

* 2 tablespoons lemon juice

* 1 teaspoon ground cumin

* 1/2 teaspoon paprika

* Salt and pepper to taste

* Fresh parsley, chopped (for garnish)

 

Instructions:

* Soak the Beans: Soak the dried fava beans in water overnight. Drain and rinse them before cooking. If using whole beans, peel them after soaking.

* Cook the Beans: In a large pot, combine the soaked fava beans and 3 cups of water. Bring to a boil, then reduce the heat and simmer for about 45 minutes to 1 hour, or until the beans are tender.

* Prepare the Dip: Drain the cooked beans and transfer them to a food processor. Add the minced garlic, olive oil, lemon juice, cumin, paprika, salt, and pepper. Blend until smooth and creamy. If the mixture is too thick, add a little water or olive oil to reach your desired consistency.

* Serve: Transfer the dip to a serving bowl and garnish with chopped parsley. Serve with pita bread, crackers, or fresh vegetables.

 

Variations: you can use garlic oil in place of the oil and garlic. You could also add a spoonful or two of tahini.
