It's blackberry season here! Blackberry pie is the perfect thing to make with them (if they even make it home! ๐)
Ingredients:
6 cups of fresh or frozen blackberries (divided)
1 cup of granulated sugar
6 tablespoons of cornstarch
1 large lemon (zested and juiced)
1 pinch of salt
2 tablespoons of butter
1 double pie crust (store-bought or homemade)
1 tablespoon of milk (for brushing the top crust)
1 teaspoon of sugar (for topping the crust)
Instructions:
Preheat your oven to 425°F (220°C).
Prepare the filling: In a large saucepan, mix together 4 cups of blackberries, 1 cup of sugar, 6 tablespoons of cornstarch, the juice and zest of 1 large lemon, and a pinch of salt. Heat over medium-high heat, stirring occasionally, until it just begins to boil.
Add butter and remaining berries: Gently fold in the butter and the remaining 2 cups of blackberries. Remove from heat and let it cool slightly.
Prepare the crust: Line a 9-inch pie pan with one of the pie crusts. Pour the cooled blackberry mixture into the crust.
Top the pie: Cover with the second pie crust, seal the edges, and cut several slits in the top to vent. Brush the top crust with milk and sprinkle with sugar.
Bake: Place the pie in the preheated oven and bake for 40-45 minutes, or until the crust is golden brown and the filling is bubbly.
Cool: Let the pie cool on a wire rack before serving.
