I first tried spaghetti squash a year or two ago, and love it! Cooked properly, it really is much like regular spaghetti in texture, and there really is no taste, so its a great low-carb substitute.
I usually serve it with a meaty spaghetti sauce, but occasionally will make an Alfredo sauce with chicken or shrimp instead of the tomato base.
This is what I had for dinner the other night. Yum!
