Camas is a stunning and iconic Northwest wildflower with a sweet, edible bulb and blue-purple flowers. Habitat is typically seasonally moist meadows that dry out by late spring.
Before sugar was introduced, roasted camas was used to sweeten other foods. Cooked bulbs were made into cakes and dried for later use. Fresh bulbs can also be dried or frozen, and then used later in soups. Camas is considered an anti-diabetic food because it does not raise blood sugar.
