Woodland Sage (Salvia Nemorosa) is perennial, with numerous leafy stems growing from the base at the beginning of summer. The violet-hued sage much loved by bees and butterflies. It is very hardy and will survive in the cold winter months and re-grow in the spring.
Woodland Sage has a cottony, spongy texture when raw, so though it's safe to eat it this way, it's more pleasant when cooked. The aromatic leaves are used as an adulterant for sage as a food flavouring.
